Cinnimon Rolls on Sunday

A couple days ago I woke up dreaming about cinnimon rolls, and I haven't been able to get them out of my mind since. They are definitely a labor of love, but sooooooooo worth it!!

Cinnimon Rolls
Combine 2 cups all-purpose flour and 2 1/2 tsp. active dry yeast.
Heat and stir 1 cup milk, 1/3 cup sugar, 1/3 cup butter, and 1/2 tsp. salt until warm (120'-130')
Add to flour mixture along with 2 eggs.
Beat with electric mixer on low speed 30 seconds, scraping sides.
Beat on high speed 3 minutes.
Using a spoon, stir in as much of 2 to 2 1/2 cups flour as you can.
Turn out onto a lightly floured surface.
Knead in enough flour to make a moderately soft dough that is smooth and elastic.
Shape into a ball.
Place in a lightly greased bowl; turn once.
Cover; let rise in a warm place until double (about 1 hour).
Punch dough down. Divide in half. Cover; let rest 10 minutes.
Roll half of dough into a 12x8-inch rectangle.
Slather 3 tablespoons of butter over dough.
Combine 1/2 cup sugar, 1/2 cup brown sugar, and 2 tsp. cinnimon.
Sprinkle half of mixture over dough.
Roll up from one of the long sides. Seal seams.
Slice dough into 12 pieces, placing in greased 9x13"pan.
(Repeat with remaining dough).
Cover, and let rise until nearly double (about 30 minutes).
Bake in a 375-degree oven for 18-22 minutes.
Drizzle with either:
Powdered Sugar Icing
2 cups sifted powdered sugar, 1/2 tsp. vanilla, milk or OJ
Mix until creamy.
OR (if you really want trouble!)
Cream Cheese Glaze
3 oz. cream cheese, 1/4 cup butter, 1 tsp. vanilla, 2 cups powdered sugar
Mix together until smooth. (Can be heated if desired.)

Those look great! If I need cinnamon rolls I definitely don't make them. The nearest bakery works just fine for me.

UMMMMMMM!!! That has got to me my # 1 sweet weakness. I'm glad you sent your recipe, I haven't made them from scratch for too long.

Mmmmmm! These look fabulous! You are such a good cook. By the way, I need a good recipe for no-bake cookies for Girl Scouts. Do you have one that you've used with your girls? You are the best person to ask!

Thanks for the no-bake cookie recipe (I just emailed you back) but I got back on your blog to write this recipe down because I am in charge of breakfast at my scrapbook retreat this weekend, but I just realized that I don't even dare attempt this delicious recipe in the mountains at a cabin for 12 other ladies. I will attempt it at home one morning though...mmmm, delicious!
