If it ain't broke....

One of my New Years resolutions was to try out some new recipes from the various magazines I receive. I did not, however, consider that my family might not want to participate in the experience. A couple nights ago I tried out this Creamy Chicken & Rice dish for dinner.


With an ingredient list that included spinach (which my kids usually like), cream cheese, chicken broth, and tomatoes I didn't think we could go wrong. WRONG. My kids refused to touch it. Last night I made the Fettucine Alfredo. (After asking McKenna to choose from my list which option she wanted).

Lydia took one bite and said, "it tastes funky!" And then Summer and McKenna started saying the same thing. (For the record, it did NOT taste funky. It was fine).
This is on the heels of another disaster last week when I tried out a new recipe for a three-cheese chicken tetrazzini. I prepared it during the afternoon, and when I found out David wouldn't be home for dinner I stuck it in the fridge and fed the kids Top Roman. When David got home he hadn't eaten, so I told him I would warm up the chicken tetrazzini. I stuck it in the oven, set the timer, and went to bed. My husband (who has been incredibly busy lately) took it out of the oven, set it on the stove, (did not eat it), and left it there ALL NIGHT. When I woke up at 6am the next morning I realized the beautiful casserole I had slaved over (okay, not really SLAVED, but taken the time to make) had been sitting on the stove for 8 hours and was no longer safe to eat. I have a few more recipes to try this week, but if they are as equally unsuccessful I am going back to the staples of tacos, spaghetti, and cold cereal!

This blog made me laugh so hard, I had to read it to Jake! Seriously, that is how I feel! My kids lately do not want to eat anything I make. Sometimes I wonder why I even take the time to try to prepare a nice meal when they would rather eat Mac N Cheese, Top Roman, Chicken Nuggets, Corn Dogs, etc... It drives me crazy! Oh well, I may as well just start cookin for Jake and I and make the simple meals for the kids. Good Luck with that! I think it is a great New Years Resolution and I am so sorry about your nice four cheese meal you made! That is completly frustrating! Just to hear it made me flinch!! :(

The chicken tetrazini (sp?) was pretty much a tragedy in my book! Meal prep isn't top of my list of fun things to do, so to have it end in a whole casserole wasted would be unbearable! You have my utmost sympathy. And as far as trying to please the kids......you have my best wishes!

Oh, how frustrating!!! I guess you'll just have to make these meals for yourself, huh. And I am so sorry about the chicken tetrazzini!!

Both recipes sound delicious... would you mind sharing them? (o; I can totally relate... just last night my David had no interest in eating what I'd made for dinner (it was even prepared ~sans the pineapple b/c he likes it better that way... and also b/c I thought I had a can of it... an didn't) but he had a really bad day at work, so I tried not to take it personally.
